Combine the gin, red currant sirup, egg white and freshly squeezed lemon juice in the cocktail shaker. Dry shake for 15-20 seconds. Add ice to the shaker and shake vigorously for another 15 to 20 seconds. Strain the cocktail into a coupette or similar cocktail glass ware. Serve immediately. No garnish needed. RED CURRENT SYRUP * 500ml Red Currants * 500 g suger * 1 Tbsp Lemon juice, optional * A pinch of sea salt Place sugar and water in a saucepan. Bring to a boil while stirring. Remove from heat and add Red Currants, lemon juice and a pinch of salt. Let it sit covered for three hours. Strain the liquid through a fine mesh strainer. Pour into a glass container, seal and refrigerate.
